Tierso Tomato Pesto Salad 2/3 cup nonfat cottage cheese 1 Tbsp. sun-dried tomato pesto 1 medium tomato 1/4 ripe avocado Salt and pepper Instructions Lightly mix cottage cheese and pesto. Core tomato and slice vertically into six partial wedges, cutting carefully so tomato stays together at bottom. Place tomato on plate, opening wedges slightly. Spoon cottage cheese mixture into center of the tomato. Slice avocado into 1/2-inch pieces and use to garnish.
