Quantities given made enough for a dinner and a small lunch the next day. Increase accordingly. One lb. fresh baby spinach One can cannellini beans (drained) Four cloves garlic minced Saute garlic in some EVOO. Add spinach and cook until most of the liquid is absorbed. Add cannellini beans and season to taste with salt, pepper, a pinch or two of red pepper flakes. Heat through and serve with some crusty bread and a salad. If you'd like this soupier, don't drain the beans. I'm thinking this would be good cold or room temperature as well as hot. Could even spread it on some Italian bread slices, add your shredded cheese of choice and broil until cheese is melted.
