Note: Organic ingredients are recommended... INGREDIENTS: 1 unbaked pie shell, 9-inch (homemade if desired) (my homemade pie shell recipe: 1/2 cold water, 2-3 drops sweet dark vinegar, 2 tbsp extra virgin olive oil, 3-4 tbsp whole wheat flour, 3-4 tbsp all purpose flour, 1/2 cup self rising flour and knead 2 minutes until a soft dough form, covered for 1 hr in a warm place before it is used) 6 cups peeled apple slices 1/3 cup cane sugar (original recipe called 3/4 cup) 1 tsp cinnamon 1/4 tsp nutmeg 1/8 tsp salt 1 tbsp lemon juice (optional) TOPPINGS: 1/4 cup cane sugar 1/3 cup all-purpose flour 1/3 cup oatmeal 2 tbsp butter 1/2 cup chopped walnuts (or pecans) METHODS: For homemade pie shell, roll out the soft dough on a slightly flour surface, try to roll it as round and even as possible. Combine sugar, cinnamon, nutmeg, and salt; sprinkle over the apples. Fill pie shell with apple slices. Trim the edges well if using a homemade pie shell. Combine topping ingredients until crumbly; sprinkle over top of pie. Bake at 400° for 45 to 50 minutes, until apples are tender and topping is browned.
