Vegetarian-Vegan Friendly Recipe

TNT(This is my experiment for today. They turned out great and I'm

having some right now for lunch)

 

 

Marinated Artichokes

 

2 cups frozen artichoke quarters(unthawed)

 

Marinade:

1/2 cup Smart Balance Omega Oil(or your favorite olive oil, etc.)

1 cup vinegar( I used Red Wine Vineagar)

1 teaspoon garlic powder

1 teaspoon onion powder

1 Tablespoon sugar(I used organic cane sugar)

salt and pepper to taste

 

Directions:

In a shallow glass baking type dish(I used a 9 in. square 2 in. deep)

place 'unthawed' artichokes touching but not layered.

Prepare marinade by combining oil and vinegar with dry ingredients .

Pour marinade over artichokes, cover and chill for several hours.

 

Note: When one is making any dressing or marinade using vineagar it

is best to use glass containers and wooden spoons. That will

eliminate the metalic taste from a metal utensil or pan.
