Guest guest Posted July 5, 2007 Report Share Posted July 5, 2007 This is one of my favourite tomato soups. Quick, low fat and great for making in the summer when tomatoes are so much cheaper. Christie Thick Tomato and Rosemary Soup 450g (1 lb) tomatoes, chopped 350g (12 oz) potatoes, diced 1 small onion, chopped 450mls (1 pt) vegetable stock 2 sprigs of fresh rosemary ½ lemon, grated rind and juice Pit all the ingredients in a saucepan and bring to the boil.
