FLAUTAS DE PAPAS - Potato Flautas 7 medium Idaho potatoes, peel and cooked 1 medium white onions,diced 1/3 cup olive oil 2 Roma tomatoes,diced 1 hot Jalapeno or Serrano chile pepper,diced 1/2 teaspoon black pepper salt corn or vegetable oil 16 corn tortillas Boil the potatoes in 4ths, until soft but not mushy. Rinse under cold water,and mash with the back of a fork. They should be lumpy. Heat the olive oil in a frying pan. Add the onion and pepper and sauté 3 minutes. Add the potato, tomato, and seasonings and sauté 5 more minutes. Remove from heat. Heat about an inch of corn oil in a frying pan on medium high. Divide the potato mixture into the 16 corn tortillas. Wrap tightly and secure with wooden toothpicks. Serves 3-4 people and be sure to put some guacamole and salsa on top of them.
