INGREDIENTS: 1 tablespoon yeast (1 package) 1 cup lukewarm milk or water (or 1/2 cup each is fine) 2 tablespoon honey (original recipe called 1/8 cup) 2 tablespoon extra virgin olive oil or butter (original recipe called 1/8 cup) 1 brown egg 2 cups whole wheat flour 1/2 teaspoon salt METHODS: Dissolve yeast in water and honey for about 5 minutes. Place all ingredients in mixing bowl and knead until it loosens from sides of the bowl. Place in large oiled bowl, cover and let rise until about double. Gently push fist into dough to deflate. Cover it and let it rise for the second time. Grease bottoms and sides of 12 medium muffins cups with olive oil or butter. Divide dough into 36 equal pieces. Shape each piece into a ball. Place 3 balls in each muffin cup. Brush with extra virgin olive oil or butter. Cover loosely with plastic wrap and let rise in warm place about 30 minutes. Note: be sure it is in a warm place. Or remove dough and shape into any loaves, rolls, or buns you like. Bake at about 375 F for 12 to 15 minutes or until golden brown. Serve warm or cool. Make 12 rolls.
