Guest guest Posted July 1, 2007 Report Share Posted July 1, 2007 From Book:Vegan With Vengeance I think this has a very delicate flavor for those who don't want to taste the pumpkin much it is a easy, easy way to fool the kids (or hubby) but for me next time I will double the spices. 2 1/2 cups white flour 2 1/2 teaspoons baking powder 1/2 teaspoon baking soda 2 teaspoons cinnamon 1 teaspoon ginger 1/2 teaspoon nutmeg 1/4 teaspoon cloves 2 cups rice milk 1 (15 ounce) can pureed pumpkin (not pie mix) 1/3 cup oil 1/3 cup brown sugar 2 teaspoons vanilla extract Preheat the waffle iron. Sift together flour, baking powder, baking soda and spices. In a separate bowl whisk the pumpkin, rice milk, brown sugar, vanilla and oil. Then pour wet over dry ingredients.
