Hi Jackie welcome in here with us.

I've never heard of dofu???

Agedashi Dofu

 

12 ounces firm tofu or extra firm tofu

sauce

1 cup dashi

2 tablespoons soy sauce

2 tablespoons mirin

oil (for deep frying)

grated daikon radishes

green onions, chopped fine

 

 

Press the tofu for at least 10 minutes. Then quarter.

1.. Place oil in the pan over medium heat. When it is hot, add the tofu a

little at a time to avoid cooling the oil. Move the tofu gently to prevent

it sticking to pan. [now you know why they supply chopsticks with Woks.].

2.. When tofu is crisp and golden brown on the outside, place on paper

towels and let drain.

3.. Mix the grated radish and chopped onions together. Set aside.

4.. In a pan add the soy sauce and mirin to the dashi. Bring to a boil.

Remove from heat.

5.. Arrange the tofu on serving platter and pour sauce on top. Top with

the radish mixture.

6.. Serve.

Most instant dashi are have bonito (fish); read the labels carefully

or sub kombu (seaweed base) or try this dashi sub recipe:

 

Makes 5 cups

 

Vegetable Dashi

 

- 2 medium shiitake mushrooms, dried or fresh

- 4 ounces daikon, scrubbed and cut into 1/2-inch-thick rounds

- 2 large or 4 small scallions, cut into 2-inch lengths

- 1/4 cup coarsely chopped celery leaves

- 4 snow peas (optional)

- 1/2 teaspoon sea salt or to taste

 

If using dried shiitakes, place in a small bowl and add 1/2 cup warm

water. Set aside to soften for 15 minutes. If using fresh shiitakes,

rinse briefly.

 

Place all the ingredients, including the soaking liquid if using dried

shiitakes, in a medium saucepan. Add 6 cups of water, cover, and bring

to a boil. Reduce the heat to a gentle simmer and cook, partially

covered, for 30 minutes, or until the daikon is soft. Strain,

reserving the shiitakes and daikon for another dish and discarding the

remaining vegetables. Use right away.

 

Vegetable Dashi may be cooled and refrigerated for up to 3 days or

frozen for longer.
