Guest guest Posted June 30, 2007 Report Share Posted June 30, 2007 The shallot really brings out a unique flavor Shallot Hummus 1 8 oz. can garbanzo beans 4 cloves garlic, peeled and crushed 1 shallot, minced (2 are good too) 1/4 cup tahini (middle estern store, health food store or the ethnic isle of the market) salt and pepper to taste olive oil 2 T minced fresh parsley Mince garlic in food processor. Add shallots, garbanzos, tahini, salt and pepper. Process well. Add enough olive oil to get the consistency to spread. Add parsley and process until mixed. Serve, topped with olive oil.
