I use 1/2 the dark miso when it calls for white and I

have only dark. Should work fine.

Hi Steph,

 

You should be able to use the dark miso instead of the white by reducing the

quantity to 2T. Dark miso has a much more intense flavour than the white. I've

done this several times for the same reasons you stated - I had dark miso,

didn't want to buy more - and it worked out great.

 

But I was making a marinade and a soba noodle salad dressing... so if you're

making a vegan cheeze sauce, or something equally mild in flavour, you should

reduce the dark miso further to only 1T.

is does anyone know what I can use instead of the white miso. I don't want to

pay $5 for it just to use only 3T.
