Guest guest Posted June 30, 2007 Report Share Posted June 30, 2007 Hi Steph, You should be able to use the dark miso instead of the white by reducing the quantity to 2T. Dark miso has a much more intense flavour than the white. I've done this several times for the same reasons you stated - I had dark miso, didn't want to buy more - and it worked out great. But I was making a marinade and a soba noodle salad dressing... so if you're making a vegan cheeze sauce, or something equally mild in flavour, you should reduce the dark miso further to only 1T.
