Guest guest Posted June 30, 2007 Report Share Posted June 30, 2007 Here's a repost of one of my favorite sandwich fillers. Great inside a pita and the oven will dry it to a texture you like. Donna " Tofu with Almonds and Rosemary Sandwich Filling " Smoked almonds are in small cans sold in the isle where canned nuts are sold. If you can't find them, then you can toss almonds with seasoning and a dash of liquid smoke in a hot dry skillet or roast in the oven. This is one good sandwich! 1 lb. extra-firm or firm tofu 1/3 cup mayonnaise or vegan mayo like Veganaise 1 teaspoon Dijon mustard ¼ cup smoked almonds, chopped 2 tablespoons chives, chopped ¾ teaspoon fresh rosemary, minced 1/8 teaspoon salt 1/8 teaspoon pepper Dash of red pepper flakes if desired Lettuce, kale or spinach leaves for garnish 8 slices whole wheat bread, pita bread or a good rustic bread of your choice Preheat oven to 350. Drain tofu and chop with a fork. Spray no-stick spray on a baking sheet and pile the tofu in the middle. Bake for 30 minutes, turning over the tofu and chopping it up again with the side of a spatula once or twice. Set aside to cool slightly. Stir in remaining ingredients and serve on the bread.
