You don't have buttermilk,

but your desperate for homemade buttermilk pancakes or biscuits.

What are you gonna do?

Here's four easy solutions.

 

Homemade Buttermilk

(This recipe makes 4 servings)

 

Note: Organic ingredients are recommended...

 

INGREDIENTS:

1 cup whole milk

either

1 and 3/4 tablespoons cream of tartar or

1 tablespoon white vinegar or

1 tablespoon lemon juice

 

METHODS:

Add acidic ingredient (tartar, vinegar or lemon juice) to the milk

and stir.

Let stand at room temperature for 15 minutes.

The milk should start to curdle.

Stir well before using.

 

Note:

A combination of plain yogurt (3/4 cup) and whole milk (1/4) cup can

also be used to replace a cup of buttermilk in most recipes.

INGREDIENTS:

2 1/2 cups self-rising flour

2 teaspoon sugar

1/2 teaspoon baking soda

5 tablespoons chilled vegetable shortening

3/4 cup-1 cup buttermilk

 

METHODS:

Preheat oven to 425F.

In a large bowl, sift together flour, sugar, baking soda.

Cut shortening into the flour mixture with a pastry blender until the

mixture forms coarse crumbs.

Add buttermilk, tossing with a fork, until dough holds together.

Turn dough onto a floured surface and form into a disk.

Knead lightly just a few times until smooth.

Pat dough to a 3/4-inch thickness.

Using a biscuit cutter or glass dipped in flour, cut out biscuits.

Place biscuits about 2 inches apart on an ungreased baking sheet.

Gather the trimmings and repeat forming and cutting.

Bake about 12 to 15 minutes, until golden brown.

Makes 12.
