Note: Organic ingredients are recommended...

 

INGREDIENTS:

1/2 cup cold water

1/2 teaspoon dark sweet vinegar

1/4 cup extra virgin olive oil beaten together

with 1/4 teaspoon salt.

Add 3/4 cup whole wheat flour & 1/2 self rising flour in a bowl;

pour oil/water mixture over flour and knead a little.

Makes 1 crust.

Double recipe for 2 crust pie.

Roll out with rolling pin.

Makes upper curst strips and bottom crust.

 

Note:

Remove 1 tablespoon flour and replace with 1 tablespoon cornstarch to

make " pastry flour " .

 

FILLINGS:

1/3 cup cane sugar (original recipe called 3/4 cup)

2 tablespoons whole wheat flour

3/4 teaspoon ground cinnamon

1/4 teaspoon salt

1/8 teaspoon ground nutmeg

1 tablespoon lemon juice, if desired

6 cups thinly sliced, peeled cooking apples (6 medium)

1/2 brwon egg (room temp.) + 1 tablespoon water (brush pie before

baking)

Pour thin slices apples on a flat pan, add cinnamon, nutmeg, lemon

juice,

Maple syrup and whole wheat flour, mix well.

Then fill bottom crust on baking pan, slightly brush with oil

add apples mixture cover with the rest of the crust strips.

Bake at 350 degrees for about 40-50 minutes.
