Barb MESA, AZ ~~Avocado Citrus Sauce~~ Revised [Original from Haas Avocado newsletter] 3 cloves garlic, finely chopped 2 Tbsp butter ½ Cup *whipping cream ½ tsp orange zest finely chopped 2 Tbsps orange juice 1 Tbsp lime juice 1 Tbsp lemon juice 1 large Hass Avocado, pureed ¼ tsp salt (+ as needed) Black pepper 6 slices each lemon, lime, and orange Sauté garlic in a small amount of butter until soft but not colored, about 2 minutes. Stir in cream. Heat to a simmer, stirring frequently; do not boil. Stir in orange zest, juices, avocado, and 1/4 teaspoon salt. Keep warm. *To cut calories, I would substitute skim condensed milk for the whipping cream. As a garnish: use another 1/2 [or one] avocado sliced with 1/2 orange slices to give this dish a nice finish. ~~~Why not serve this on some brown rice or pasta and include vegetarian protein of a sausage style?
