I wondered what everyone was cooking for this holiday.

I'm invited to a barbeque and I'm going to make a

potato salad from the recipe files.

Well in the morning of the 4th I'll be cooking a lot! We have an

abundance of zuchinni, green starbusts squash, yellow straight neck

squash, many types of tomatoes, and luscious green kale growing in

the garden. I also have any herb that I would want....

 

So I was thinking about making:

zuchinni bread (will post recipe after I make it, if it turns out

good)

zuchinni pie in potato crust (I think I posted this one here)

lots of italian style tomato sauce (and freeze some)

lots of spicy tomato and cilantro sauce for enchiladas (and freeze

some)

 

I will also try to make an indian style chickpea flour pancake with

tomato and kale and indian spices....this will be experimental....so

I will post if it turns out well.

 

I am also invited to a BBQ in the afternoon, but I think I will eat

before going there. Also, I suppose I could take one of the dishes

I am making? but they are not suitable for grilling, so, we'll

see....

 

If I was not trying to utilize our crops I would make some seitan

and grill that after marinating in chimichurri sauce (I posted this

here, should be in the files)it usually goes over very well even

with meat eaters.
