Culinary Cafe Garlic Confit

1 head garlic, peeled and separated into cloves

1/2 cup olive oil

 

 

 

Place garlic in a small saucepan over low heat, and

cook slowly until soft and golden brown, 45 to 50

minutes.

 

Yields: 1/2 cup

ChupaNote: I added 1 teaspoon of red pepper to the

oil.

This is wonderful packed in a small jar and covered

with olive oil. Use it as a base for everything! Next

time I'll make a huge batch of it overnight in the

slow cooker
