Brown Rice, Vegetable, and Herb Gratin

I made this for dinner last night, and I thought it would be a good

idea for my first recipe to post. I got the idea from a cookbook,

but changed the ingredients a little.

 

2 cups brown rice

2 tbsp margarine (vegetable oil would work)

2 garlic cloves, crushed

1 cup carrots, sliced

1 zuchini, sliced

1 can baby corn cobs

2 tbsp sunflower seeds

1 tbsp oregano

1 tbsp basil (other herbs can be used)

1 1/2 cups grated mozzarella cheese

1 cup breadcrumbs

 

Directions:

Cook the rice.

Lightly grease a large oven-proof dish and preheat the oven to 350 F

Heat the margarine in a frying pan and cook the garlic, zuchini,

carrots, and baby corn for 5 minutes.

Mix the rice with the sunflower seeds,mixed herbs, and half of the

cheese, and stir into pan.

Spread evenly into greased dish and top with bread crumbs and

remaining cheese.

Cook in oven for 20-25 minutes
