I got the idea from a cookbook, but changed the ingredients a little. 2 cups brown rice 2 tbsp margarine (vegetable oil would work) 2 garlic cloves, crushed 1 cup carrots, sliced 1 zuchini, sliced 1 can baby corn cobs 2 tbsp sunflower seeds 1 tbsp oregano 1 tbsp basil (other herbs can be used) 1 1/2 cups grated mozzarella cheese 1 cup breadcrumbs Directions: Cook the rice. Lightly grease a large oven-proof dish and preheat the oven to 350 F Heat the margarine in a frying pan and cook the garlic, zuchini, carrots, and baby corn for 5 minutes. Mix the rice with the sunflower seeds,mixed herbs, and half of the cheese, and stir into pan. Spread evenly into greased dish and top with bread crumbs and remaining cheese.
