Too Hot To Cook - Summer Salad

My husband and I love this salad. Surprisingly enough, the kids and even

grandkids like it, too. This and some french bread are an entire meal.

Summer Salad

 

1 cup fresh or frozen carrots, diced

1 cup fresh or frozen string beans in 1/2 " pieces

1 cup fresh or frozen peas

1 cup fresh or frozen corn

6 cups romaine lettuce, chopped

2 cups spinach, chopped

rice chips, mexican flavored, crunched up

salsa

black olives

guacamole

 

Steam frssh carrots and beans for 10 minutes, then add peas and corn and stem

for another five minutes.

Frozen vegetables should be thawed.

Mix up the greens and veggies into individual salads garnish with salsa,

olives and guacamole.
