Guest guest Posted June 28, 2007 Report Share Posted June 28, 2007 Vichyssoise 2 large leeks washed thoroughly to remove sand and then diced 2 Tablespoons butter 1 lb. potatoes (3 med. potatoes) 3 cups veggie broth 1 cup soy milk Salt and white pepper Snipped Chives Directions: In a medium saucepan melt butter over medium heat. Add leeks, saute until softened. Peel and dice potatoes add to sauteed leeks. Add veggie broth bring to boil, reduce heat and simmer until potatoes are tender. pour mixture into blender and process until smooth. Stir in soy milk, salt and white pepper.
