Guest guest Posted June 28, 2007 Report Share Posted June 28, 2007 Cold Fruit Soup 1/2 cup dried apricot halves 1/3 cup white raisins 3 Tablespoons sugar 5 cups water 1 (3 inch) cinnamon stick 2 whole cloves 2 Tablespoons cornstarch + 2 Tablespoons cold water 3 cups chopped fresh fruit (peaches,plums,nectarines,pears,etc.) Directions: Cut each apricot half into 2 pieces In a large sauce pan combine apricot pieces, raisins, sugar ,cinnamon and cloves. Stir in 5 cups water, bring to a boil. Reduce heat cover simmer until fruit is tender. Dissolve cornstarch in 2 tablespoons water, stir into soup. Stirring constantly, cook until mixture boils and is slightly thickened. Discard cinnamon and cloves. Refrigerate until thoroughly cooled then add chopped fresh fruit. Cold Blueberry Soup 1 (16 oz.) pkg. frozen blueberies or 1 1/2 pint fresh blueberries)3 cups) 3 cups water 1/2 cup sugar 2 tablespoons lemon juice 1/4 teaspoon ground nutmeg 1 (3 in.) cinnamon stick 1/8 teaspoon salt 1 pint plain or blueberry flavored yogurt (2 cups) 4 thin lemon slices Directions: In a large sauce pan combine blueberries, water , sugar, lemon juice, nutmeg, cinnamon and salt. Bring to a boil. reduce heat. Cover and simmer apx. 10 min. . Discard cinnamon. Pour blueberry mix in blender. process until smooth. Pour into large bowl,cover , refrigerate until thoroughly chilled. Stir yogurt, then stir into soup. Garnish with lemon slices Avocado Soup 2 ripe avocados 2 Tablespoons lemon juice 2 cups veggie broth 1 cup soy milk or plain yogurt Slivered almonds for garnish Directions: Peel, cube and process Avocados in blender until smooth add lemon juice, and broth. Continue to process until smooth. pour into large bowl and stir in soy milk or plain yogurt , salt and pepper to taste. Cover , refrigerate until thououghly chilled.
