Vegetarian Stuffed Tomatoes Six Large Tomatoes Corn (enough to stuff all six tomatoes) 1 jar Pimiento Strips 1 small green or red pepper finely chopped or in very thin strips Margarine to taste Remove top portion of tomatoes. Scoop out the insides, chop and put aside. Mix pimiento strips, corn, pepper strips, and some of the inside meat from the tomatoes. Stuff tomatoes Dot with margarine to flavor Bake in 350 oven for one hour or until tomato is soft, but not collapsing. EASY AND QUICKER WAY: When I am in a hurry and don't have a lot of time for chopping, mixing, etc., I use canned Mexicorn mixed with some of the tomato, omitting the pimiento and pepper strips, stuff the tomatoes, dot with margarine and bake. You can also do this in the microwave since no browning is necessary. But watch closely so that the tomatoes do not completely collapse. You just want them softened so they are cooked.
