veggie broth? Jennifer

This will seem VERY weird, LOL, but once I was making a " chicken " casserole

using Morningstar Farms' Meal Starters Faux Chicken Strips. One part of the

recipe called for veggie broth. I didn't have any on hand and I didn't know

what I was going to do. This was when I was still relatively new to

vegetarianism. We were heating up some canned veggies to go with our dinner, and

my

Grandma gave me a great idea - drain the juice off of some of the veggies to

have

veggie broth. It worked! :)

We don't have a very large selection of vegetarian products here so I

usually use Swanson's vegetarian broth. Since they don't carry it all the

time, I buy several cans when I find it so that I always have plenty on

hand. When I make soups based on the veggie broth (and sometimes add in

Knorr's veggie dip mix), my nonvegetarian daughter thinks they are

absolutely delicious. Especially the potato and broccoli soup, and she

isn't a fan of potato soup in the first place.
