Instead of letting it soak over night, put it in a strainer and rub the quinoa between your hands under cold running water. Do that for about 5-7 minutes. That should remove the bitterness without sprouting your grains ... which is what soaking over night does. Bring 2 cups of water to boil, add 1 cup quinoa and 1/2 tsp sea salt. Turn the element down to low and let cook covered for about 20 minutes (check it after 15 minutes - my stove is funny and cooking time vary from other people's stoves). I've never had any luck making it in the microwave, so I can't help you there. Good luck and let me know how it turns out Cheers!
