Guest guest Posted June 18, 2007 Report Share Posted June 18, 2007 Cheese and Walnut Quesadillas with Apple Fig Salsa 3/4 c. crumbled or finely diced Jack cheese 1 tbsp. fresh lemon juice 1/2 c. California walnuts, toasted and chopped four 6 - 7 inch flour tortillas 2 Gala apples, peeled and cut into 1/4 inch dice 2 tbsp. vegetable oil 1/2 cup dried figs, coarsely chopped Preheat oven to 500° F. In a bowl stir together apple, figs,and lemon juice. Put 2 tortillas on a baking sheet and brush with some oil. Turn tortillas over. Sprinkle tortillas with walnuts and cheese and cover with remaining 2 tortillas, pressing gently. Brush tops with remaining oil and bake in middle of oven until golden, 7 to 9 minutes. Cut into wedges and top each wedge with a spoonful of the fig apple salsa. Serves 4 ______________________________\ ____ We won't tell.
