Guest guest Posted June 18, 2007 Report Share Posted June 18, 2007 This is most likely not a very balanced soup as i was trying to use up some things but it really turned out tasty - thought I'd share 1 qt vegetable broth 1-2 cups water (personal preference) 1 med white or yellow onion - diced 6-8 new potatoes cut in chunks & soaked in cold water 15 minutes 1/4 of a med sized head of cabbage cut in 1 inch pieces 3-4 few stripped leaves of kale - torn in bite sized pieces 1 can of white beans I simmered my broth & water with my onions while the taters soaked. Drained my potatoes & tossed them in - brought to a boil. Once potatoes were almost to my liking I added the beans, cabbage & kale and let those wilt while the beans warmed. I let it simmer for a good 20 minutes while the flavor developed and added some parsley, garlic powder & black pepper. It got really thick after the simmer - I was pleased with my creation!!
