Guest guest Posted June 17, 2007 Report Share Posted June 17, 2007 MMMMM----- Recipe via Meal-Master v8.06 by AccuChef www.AccuChef.com Title: Grilled Veggies Categories: Main Dish/Side Yield: Servings 1 lb Asparagus,Trimmed 4 lg Portobello Mushrooms 2 Red Bell Peppers,Halved 2 md Zucchini,Sliced Lengthwise -Into 1/4-Inch Planks 2 Yellow Squash,Sliced Lengthwise Into 1/4-Inch -Planks 1 lg Onion,Sliced Into 1/4-Inch -Rings 1 c Balsamic Vinaigrette 1 t Thyme,Chopped 1 t Oregano,Chopped 1 t Basil,Chopped [Note: Per serving; 90 Cal., 3 gm protein, 4 gm total fat( 0 gm Sat. fat).13 gm carb, O mg. chol., 120mg sodium,3 gm fiber, 6gm sugars We had this as a main dish with rice. It was yummy. Next time make more Portobellos. I could definately eat 2. Taken from Wild Oats Marketplace May/June 2007] 1. Combine all ingredients in resealable plastic bag. Toss to coat, and refrigerate 1 hour, or overnight. 2. Preheat grill to medium-high. Drain vegetables, and reserve marinade. Grill vegetables 15 minutes, turning occasionally.
