Spicy Peach Pillows

 

4 small croissants

3 oz cream cheese, softened (you can use any kind -

even flavored)

1 large fresh peach

1 cup milk or soy milk

2 lg. eggs

Dash cinnamon

Dash cardamom

Dash nutmeg

Dash ginger

Optional: several tbsp. Peach schnapps

 

Split croissants, spread cream cheese on bottom

halves. Peel and thinly slice peach and place slices

evenly on the cream cheese. Whisk the remaining

ingredients together. Dip each croissant in the egg

mixture and, using electric skillet or frying pan,

cook on each side until golden brown. Cook slowly so

the middle gets hot. You can keep in the oven at 300°

by placing on a cookie sheet lined with foil, then

cover the pillows until serving time. Yields 4

servings.
