Citrus Quick Bread

 

1/2 cup vegetable oil

1 cup granulated sugar

2 eggs (large sized)

1 tsp. lemon, orange, or mango extract

1/2 cup milk or soy milk

1 1/2 cups all-purpose flour

1 tsp. baking powder

1/2 tsp. salt

 

Preheat oven to 350 degrees. Mix the wet ingredients

in a small bowl, and the dry ingredients in a larger

bowl. Mix the wet into the dry. Pour into a loaf pan

that has been buttered. Bake for 45-50 minutes until

sides pull away slightly and the middle tests done.

You can also vary this with a tsp. of cinnamon added

to the dry ingredients or 1/2 tsp. of ground ginger.

1/4 cup of crushed nuts can also be added to the dry

ingredients as well.
