Guest guest
This does have a lot of ingredients, but they're everday items and you could use canned items and bagged cabbage to make it easier. It makes 4 one-cup servings. 2/3 C sliced carrots 1/2 C diced onion 2 garlic cloves minced 3 C fatfree broth 1 1/2 C diced green cabbage 1/2 C diced zucchini 1/2 C green beans 1 T tomatoe paste 1/2 t dried basil 1/4 t dried oregano 1/2 t salt Spray large saucepan w nonstick spray and heat. Saute carrot, onion, and garlic over low heat until softened (~5 minutes) Add broth, cabbage, beans, tomatoe paste, basil, oregano, and salt and bring to a boil Reduce heat and simmer covered ~ 15 minutes or until beans are tender. Stir in zucchini and heat another 3-4 minutes.
