More egg-free ice cream

Not vegan, as Jenni posted, but anyone who'd like to avoid eggs or make good ice

cream might want this one, especially if you're as fanatical over citrus as I

am. I'm doing this one *tonight*! I've tried similar recipes; they turn out

really good.

 

By the way, I think I'd rather have green food coloring, but that's just me.

Lime and Lemon Ice Cream

Ingredients

4 cups whole milk

1-1/2 cups sugar

1 cup whipping cream

1 teaspoon finely shredded lemon peel

1/3 cup lemon juice

1 teaspoon finely shredded lime peel

3 tablespoons lime juice

Several drops yellow food coloring (optional)

Lemon and/or lime slices and curls (optional)

 

Directions In a large mixing bowl thoroughly combine milk, sugar, whipping

cream, lemon peel, lemon juice, lime peel, lime juice, and, if desired, food

coloring. (Mixture may appear curdled.)

Freeze in a 3- to 4-quart ice cream freezer according to the manufacturer's

directions. Ripen 4 hours. If desired, garnish with lemon and lime slices and

curls. Makes 2 quarts (16 servings).

 

Make-Ahead Tip: Transfer to freezer container; seal, label, and freeze up to 1

week.

Tried-and-true now. It is *very* good. I had to make another

batch. It is ridiculously good with raspberry sauce (as the wife

had it) or in a float with a precious can of Diet Cheerwine (a

cherry soda from the South that I can hardly ever get. This is how

I had it.) It's like 7-Up ice cream, so if that sounds good to you,

you'll like it lots.
