Guest guest Posted June 2, 2007 Report Share Posted June 2, 2007 Nutty Couscous 1 3/4 cups veg. broth 1 cup couscous 1/3 cup toasted walnuts, chopped 2 tablespoons finely diced red bell pepper 1/4 cup minced onion 1 tablespoon minced Italian parsley or cilantro pepper, to taste Bring broth to a boil in a small saucepan. Add remaining ingredients, and stir to blend. Cover and remove from heat. Let stand for 5 to 10 minutes or until all the liquid has been absorbed. Fluff with a fork before serving.
