Guest guest Posted June 2, 2007 Report Share Posted June 2, 2007 INGREDIENTS: 1/2 lb organic no fat cream cheese; room temperature 1/2 teaspoon organic nutmeg (optional) 1 lb organic no fat ricotta cheese; room temperature 24 sheets commercial filo; cut in half make 48 sheets 1 lb organic no fat small curd cottage cheese; room temperature 3 tablespoons organic extra virgin olive oil (or more) 1 1/2 tablespoon organic pure honey oragnic powdered sugar METHOD: Mix cream cream, ricotta and cottage cheese (must be room temperature), add 1 1/2 tablespoons organic honey. Hand mix for 1 minute, then set aside while you prepare the filo. Lay the filo flat on a table and keep covered with a damp towel over waxed paper or plastic wrap. Cut filo into half lengthwise, make 48 sheets. By stacking 4 sheets, form a base of 15 x 18 inches, brushing the top of each sheet with olive oil as you stack them. Fold bottom up to form triangle shape to the side edge then fold again and again toward the center. Spoon 3 tablespoons the filing inside the dough. Continue to fold 2 more times to close the edge. Brush both sides with olive oil. Continue the rest. Make 12 triangles. Bake in a 350F oven for 20-25 minutes or until the filo puffs up and turns a golden chestnut color.
