Guest guest Posted June 2, 2007 Report Share Posted June 2, 2007 I make these in the George Foreman Grill Fontina And Grilled Vegetables Wrap 1/3 or 1/2 cup mayonnaise 1/4 cup chopped basil leaves 1 lime, juice of 1 medium zucchini 1 red, yellow or orange bell pepper, quartered 2 red onion slices, about 1/4 " thick olive oil salt and pepper 2 cups shredded Romaine lettuce 1/2 pound fontina cheese, or Swiss grated 2 large flour tortillas Prepare spread in a small bowl. Combine mayonnaise, basil, and lime juice. Stir to blend. Brush vegetables with olive oil. Season with salt and pepper. Arrange vegetables on a medium-hot barbeque. Cook 2 to 3 minutes, or until grill marks appear. Flip over and grill an additional 2 minutes. Lay out flour tortillas, and spread on the mayonnaise mixture. Place lettuce on tortilla, top with cheese and vegetables off the grill. Wrap as you would a burrito. Serves 2. ______________________________\ ____ Be a better Globetrotter.
