Skillet Chili (fast, easy and so tasty)

Skillet Chili

 

1 tablespoon olive oil

1 medium chopped onion

2 teaspoons chili powder

1 teaspoon cumin

2 10 ozs. each cans diced tomatoes with green chiles

(Rotel brand are perfect)

1 large zucchini squash, diced

2 16 oz. cans black beans, rinsed and drained

2 cups cooked rice

 

Heat oil in a large nonstick skillet. Cook onion 5

minutes or until softened.

Stir in chili powder and cumin and cook 1 minute.

Add tomatoes with chiles, bringing it bring to a boil.

 

Add zucchini and cook 3 minutes or until tender.

Add beans and rice and cook 5 minutes or until heated

through.

Serves 4.

Sounds like Spanish Rice to me.

Sure does sound good and it's my type of recipe, leftover rice and

the other ingredients I almost always have on hand.
