Gypsy Fresh Tomato and Garlic Pasta 2 1/2 cups uncooked pasta (use your favorite shape) 2 teaspoons olive oil 2 or 3 garlic cloves, minced 1 pound roma or plum tomatoes, chopped 1 tablespoon chopped fresh basil leaves 1/4 teaspoon salt 1/8 teaspoon ground pepper Cook and drain pasta as directed on package. While pasta is cooking, heat the oil in a large skillet over medium-high heat. Cook garlic in oil for about 30 seconds, stirring frequently to avoid scorching. Stir in tomatoes. Cook 5 to 8 minutes, stirring often, until tomatoes are soft and sauce is slightly thickened. Stir in the basil, salt and pepper. Cook for one minute longer.
