Guest guest Posted June 1, 2007 Report Share Posted June 1, 2007 Swiss Barley Soup 1/4 lb round barley 1/4 cup lentils 1 cup cubed carrots 1/4 cup diced celery 1 cup diced white onion 3 cloves minced garlic 1/2 diced red pepper 1/2 diced green pepper 1/2 cup chopped parsley or cilantro 1 tbsp ground black pepper 1 tsp basil 1 tsp oregano 1 tsp chives 2 tbsp vegetable oil 2 3/4 quarts broth 1/3 cup canned tomatoes chopped Soak barley in a bowl of water to cover for at least 3 hours; drain and rinse. In a large pot, heat oil, add carrots, garlic, celery, onion, red pepper, green pepper and drained barley and stir together for three minutes. Add broth and black pepper and cook for 45 mins. Add lentils, canned tomatoes, basil, oregano and chives and cook 20 more minutes. Ganish with chopped parsley and serve hot. ______________________________\ ____ Fussy? Opinionated?
