Try this: Marinated Veggie Salad Wash & cut a variety of fresh veggies into bite-sized pieces (rounds, chunks, sticks, etc. * Mix together with: 1 can chickpeas (Garbanzo beans), rinsed ** 1/2 cup black olives and/or chopped avacado *** 1/2 tsp. lemon juice 2 Tbsp. salad dressing **** Season with your favorite spices/herbs, optional***** Mix everything well and place in refrigerator for an hour (up to two days) to cool and let the flavors blend. ****** Notes: *(I use whatever I like and have on hand such as summer squash, snow peas, cherry tomatoes, cauliflower, etc, trying to get a variety of shapes, colors, textures, and tastes. Each salad differs.) **Other beans also work well. Try Black-eyed Peas or Kidney Beans. This adds protein. You could also use 1-2 cups of cooked, rinsed pasta (bowtie works well) ***This adds " good " fat to the salad. If you use avacado, use the lemon juice to marinate the avacado before adding to the other veggies and plan to eat the salad within a couple of hours. The avacado does not keep well. ****(I like Greek vinagrette with Feta, but any dressing works. I don't recommend Mayo. Purists could use an olive oil drizzle with a bit more lemon juice and favorite herbs.) *****(I use lemon pepper, and/or Italian seasoning, and/or fresh parsley, thyme, dill, cilantro or oregano, etc. Go easy on the seasonings the first time, then experiment on future salads to see what you like.) ******To dress it up for company, place a scoop of salad on a lettuce leaf, then sprinkle with something crunchy just before serving such as pumpkin seeds, sliced almonds, or crushed seasoned bread crumbs. It is 89 degress right now, at 5:04pm PDT, here in Portland Oregon. It is WAY too hot!!! I still have to get dinner. We had vegetarian hot dogs, and homemade large french fries.
