Guest guest Posted May 30, 2007 Report Share Posted May 30, 2007 Vegetarian-Vegan Friendly TNT Asparagus W/Tomato Veganaise Sauce Prepare 1-2 lbs. fresh asparagus by cutting off the tough root end and peeling apx. 2-3 inches off the stem.**** Simmer until tender Sauce: 1/2 Cup Veganaise 1/2 Cup stewed tomatoes(drained of juice) Salt and Pepper to taste. Warm sauce but do not boil Serve hot or cold Serves 4 **** In the past I always 'snapped' the Asparagus stems and wasted a lot of the vegegatable. I now cut off just the tip of the root end and peel appx. 2-3 inches of the skin on the stem. The skin on the bottom of the Asparagus is tough but inside is tender.
