Otherwise, make it with fresh fries and no fat cheese, for a delicious meal. Add a crisp green salad, veggies, crusty bread and it's a great brunch, lunch, or dinner. Ingredients: 4 medium organic lightly fried potatoes (finely cubed) 2 tablespoons organic extra virgin olive oil 6 oz crumbled vegan cheese 4 organic brown large eggs + 3 tablespoon of organic no fat milk, beaten with a fork Methods: In a nonstick frying pan, add oil then eggs. Cook with low heat for 5-8 minutes, add 2 oz cheese on one half side, add potatoes cubes, top with remain cheese cook until edges are nicely browned.
