Guest guest Posted May 28, 2007 Report Share Posted May 28, 2007 * Exported from MasterCook * Veggie Rice with Egg - 5 pts Recipe By :Eat Carbs Lose Weight by Denise Austin Serving Size : 4 Preparation Time :0:25 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup brown basmati rice 2 tablespoons toasted sesame oil -- divided 1 large egg -- lightly beaten 2 teaspoons grated ginger root 1 teaspoon minced garlic 2 green onions -- cut into 1/4-inch pieces 4 ounces snow pea pods, fresh -- trimmed 1/2 cup frozen peas and carrots -- thawed 3 tablespoons reduced sodium soy sauce In a medium saucepan, cook the rice according to the package directions. Fluff the rice with a fork; spread it on a baking sheet, and allow to cool completely, about 15 minutes. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the egg and cook, stirring, for about 2 minutes, or until firm. Transfer to a plate and reserve. Heat the remaining 1 tablespoon oil in the skillet and add the ginger, garlic, green onions, and snow peas. Cook, stirring often, for 2 minutes. Add the rice and peas and carrots; cook for 2 to 3 minutes, or until the vegetables are crisp- tender. add the soy sauce and cook for 3 to 5 minutes more, or until the rice is heated through. Cut the egg into strips or pieces and add to the rice. Serve.
