I finally got around to making the cinnamon vanilla version of Deanna's

recipe and, wow, is it yummy!! Sooo smooth & comforting. Thanks so

much, Deanna--I love this recipe!

(My Sunday morning experiment)

 

 

Chocolate Tapioca Pudding

 

4 cups chocolate soy milk (reserve 1/3 cup to which you will add 2

tablespoons corn starch)

1/3 cup sugar(I used organic cane sugar)

dash of sea salt

3 tablespoons pearl Tapioca(not 'instant' Tapioca)

1 teaspoon vanilla

(optional: 2 tablespoons chocolate chips. I used organic grain

sweetened chocolate chips)

 

Add soy milk,sugar,salt,and pearl tapioca and set aside for 15-20

minutes. You can prepare this the night before and refrigerate. This

allowes the pearl tapioca to 'swell'.

 

Disolve corn starch in cold soy milk and set aside

 

Add corn starch mixture to soy milk mixture and simmer to a slight boil

stirring constantly until mixture thickens. (Pudding will thicken as it

cools )

I like a stronger chocolate flavor so I add 2 tab.of chocolate chips.

Add vanilla and set aside to cool.

 

PS. I make this same recipe using vanilla/plain soy milk flavored with

Cardamon. Or cinnamon if you prefer.

Thanks Maureen,

Pearl Tapoica Pudding is my favorite. I made it for the children when

they were small. By the way, I'm fixing the chocolate version today.
