Organic Walnut Honey Glazed Cake (Low Fat & Sugar)

CAKE:

1 cup organic all purpose flour or cake flour; sift

1 1/2 teaspoons baking powder

1/4 teaspoon salt

1 teaspoon cinnamon

1 tablespoon grated organic orange zest

1/3 cup organic extra virgin olive oil

1/3 cup organic fine raw brown sugar

3 organic brown eggs large (room temp.)

1 tablespoon vanilla

4 tablespoons organic soy milk

1 1/2 cup fine diced organic walnuts

HONEY SYRUP:

3 tablespoons organic fine raw brown sugar

4 tablespoons organic honey

8 tablespoons spring water

1 tablespoon organic lemon juice

 

METHOD:

Set oven to 350 degrees (second-lowest oven rack).

Slightly oiled a 9-inch square glass baking pan.

In a bowl combine flour with baking powder, salt, cinnamon and orange

zest; set aside.

In a large bowl cream olive oil together with brown sugar until

fluffy (about 3-4 minutes, no sugar granules should remain).

Add in eggs (one at a time) and vanilla and beat well to combine.

Add in flour mixture alternately with milk (2 tablespoons flour with

1 tablespoon milk) mixing until just combined.

Stir in 1 cup walnuts.

Transfer to prepared baking pan.

Bake for about 40-45 minutes or until cake tests done.

Cool for about 20 minutes then slice into diamond or square shapes.

Drizzle the honey glaze over the slices.

For the honey glaze; in a saucepan combine honey, sugar and water;

bring to a boil, reduce heat and simmer for 5 minutes stirring with a

wooden spoon.

Add in lemon juice and continue to boil for 2 minutes. Stir in 1/2

cup walnuts.

Drizzle over cake.
