Organic Spinach Pie (Low Fat & No added Sugar)

INGREDIENTS

2 lbs organic spinach

1 organic egg large

2/3 cup no fat vegan cheese

1 bunch organic green onion

1/2 bunch organic parsley; finely chopped

2-3 cloves garlic; grinded

Dash organic dill

Dash black pepper

2 tablespoons organic extra virgin olive oil

 

For the dough:

1 cup water

Vinegar few drops

1/2 teaspoon salt

2 cups organic all purpose soft flour

1 cup organic self rising flour

1/2 cup organic extra virgin olive oil

 

METHOD for the Dough:

In a bowl add the water, drops of vinegar and the olive oil.

Add 1 teaspoon salt and the flour (1/2 cup at a time).

Work the mixture well as much as it needs to become tight.

If it requires more water and flour add in order for the dough to

become as thick as it needs.

Cover the dough with plastic wrap and leave it for half an hour

before it is used.

 

METHOD for the Pie:

Wash the spinach very carefully using plenty of water to remove soil

and chop it in very small pieces.

Remove its liquid/water, place it into a large bowl, set aside.

Add 2 tablespoon olive oil on a flat pan in medium heat,

pour in the spinach, green onion, pepper, dill, garlic, parsley.

Cook the mixture well with a wooden spoon in order to unify all

ingredients, about 10 minutes until all vegetable are tender.

Beat egg and add in the mixture, then add cheese.

Oil a baking pan.

Alternatively separate the dough into 4 balls.

Flatten each ball with a thin rolling pin on a floured pastry board

and roll out 4 phyllo sheets,

two for the bottom and two for the top.

If you do so you should roll out each phyllo and make it very thin.

Tip: When pie is ready to be baked wet your hands and sprinkle water

over the top filo, in order to make it more crusty.

Place the first sheet in the baking pan and oil it.

Spread the mixture on top of the first sheet and then place the

second sheet.

Spread more mixture on the second sheet then thrid sheet and top

sheet.

Slightly oil it and slice off any parts of the sheets that have

remained.

Score the top sheet with a knife into squares or use a cookie animal

cutter to create your own style pie. Brush egg wash (1/2 egg + 1

tablespoon water) before putting it in the oven.

Bake for an hour in 350F.
