Guest guest Posted May 27, 2007 Report Share Posted May 27, 2007 INGREDIENTS: 1 lb organic leeks 1 organic brown egg (room temp.) 1 bunch organic green onion; finely chopped 1/3 cup any yellow cheese 1/3 cup any white cheese 2 tablespoons organic extra virgin olive oil 1/2 bunch organic parsley For the dough: INGREDIENTS 1 cup spring water few drops orgnaic vinegar 1 cup organic all purpose flour 1 cup organic self rising flour 1/3 cup organic extra virgin olive oil METHOD: In a bowl add the water, drops of vinegar and the olive oil. Add the flour 1/3 cup at a time (frist all purpose then self rising). Work the mixture well as much as it needs to become tight. If it requires more water and flour add in order for the dough to become as thick as it needs. Cover the dough with a plate or plastic wrap and leave it for an hour before it is used. METHOD: Prepare the dough like in the traditional filo dough recipe Remove greens and ends from the leeks. Chop them in small pieces and wash them using plenty of water to remove soil. Chop them using a blender or a knife. Heat the olive oil, pour them in the pan cook 5 mintues or until tender, then add 1/2 egg and cheese (grated). Work the mixture well with a woonden spoon in order to unify all ingredients. Olive oil a baking pan well. Spread the dough and make two sheets of filo (one for the base and one for the top). Place the first in the baking pan and oil it. Spread the mixture on top of the first sheet and then place the second sheet. Oil it and slice off any parts of the sheets that have remained. Score the top sheet with a knife into squares or use animal cookies cutter to make your own pie style. Brush with 1/2 egg before baking. Bake for an hour in 350F 45-50 mintues.
