Guest guest Posted May 27, 2007 Report Share Posted May 27, 2007 INGREDIENTS: 1 cup organic lentils 4 tablespoons organic extra virgin olive oil 2 large organic onion, finely chopped 6 organic garlic cloves, grinded 1 cup organic homemade tomato juice or 1-2 organic tomatoes chopped 8 cups springwater METHOD: Check the lentils and remove any stones (this may happen some times. Normally the producer has removed them before packing them). Bring water to boil, add lentils, onion and garlic. When they start boiling rinse them well, add new spring water and boil them again. Reduce to low heat and keep boiling for 1 to 1 1/2 hour. Add tomatoes juice and continue to boil them for another 1/2 hour. Add olive oil (as much as desired). Serve with ground pepper, organic homemade breadsticks and no fat cheddar cheese. If you want you can mash the lentils in with a blender to make the soup smooth.
