Guest guest Posted May 27, 2007 Report Share Posted May 27, 2007 INGREDIENTS: 8 oz white baby lima bean 4 tablespoons organic extra virgin olive oil 1 large organic yellow onion, chopped 3 organic garlic cloves, minced 1 cup organic tomatoes; chopped (or 1 cup organic homemade tomato juice) 4 organic celery stalks, finely diced 4 organic carrots, 1/2 inch pieces 8 cups springwater 1 bunch organic parsley, finely chopped 1 teaspoon salt (or 2 teaspoons organic lemon juice) METHOD: Soak baby lima bean with hot water at least an hour. Wash them well and place them in a deep sauce pan. Bring 8 cups of water to boil, add beans boil them for 20 minutes. Add celery, carrots, onion, garlic, parsley and tomatoes. Bring to a boil. Reduce heat, cover and simmer for one hour. Add salt (or lemon juice) and olive oil (as much as desired). Cover and simmer until vegetables are tender, about 30 minutes longer.
