Guest guest Posted May 27, 2007 Report Share Posted May 27, 2007 INGREDIENTS: 8 oz organic white button mushrooms, finely chopped 1 bunch organic spring onions; finely chopped 1 glove garlic; grinded 1 tablespoon fresh parsley; finely chopped 2 tablespoons organic all purpose flour (whole wheat breadcrumb is OK, too) 3 tablespoons no fat or reduced cheese (cheddar, mozzarella & etc) 3 tablespoons organic extra virgin olive oil Dash organic dill Dash black pepper if desired METHOD: Mix in a bowl the mushroom, green onion, garlic, parsley, dill & pepper. Add 1 tablespoon olive oil on a flat pan, pour in all ingredients Stir with a wooden spoon, cook about 3-5 minutes until mushroom is tender. Add cheese and flour to form cakes and fry both sides with olive oil (2 tablespoons or more) until golden brown. Do not burn the olive oil because this way the mushroom cakes might burn on the outside easily. When ready remove from frying pan lace them in a platter on top of and absorbing paper and serve.
