Guest guest Posted May 27, 2007 Report Share Posted May 27, 2007 INGREDIENTS: Filling: 4 organic brown eggs large (room temp.) 1/3 cup organic pure maple syrup 1/2 cup organic semolina (8 tablespoons) 3 cups organic homemade no fat soymilk 1 teaspoon vanilla 1/3 cup organic extra virgin olive oil Pastry: 20 sheets phyllo pastry (room temp.) Syrup: 1/2 cup spring water 1 cinnamon stick 1 organic lemon peel 1/3 cup organic pure honey 1 tablespoon organic lemon juice METHOD: Bring the soy milk to the boil gently, Reduce to low heat, gradually add the semolina to the soy milk while stirring continuously with a wooden spatula. Return to a gentle heat and cook for about 5 minutes, stirring continuously, until the mixture has thickened. Take off the heat, mix in olive oil and let it cool for 10 minutes. Beat the eggs with maple syrup until they get pale and fluffy Prepare the phyllo pastry into a 9 " inch cake glass pan. Line the baking pan with olive oil, and then place 4 sheet of phyllo, olive oil on each side. Pour the batter and flatten with a spatula. Then continue repeat with the rest of the Phyllo sheets (should be able to make 4-5 times). Bake in a preheated oven, 350F/180C, for 45 minutes until pale golden. Take out and cool for 10 minutes while you make the syrup. Dissolve the honey in the water, add the lemon peel & lemon juice and boil gently for 5-7 minutes until slightly thickened. Let the syrup stand for 5 minutes, then remove and slowly pour all over the milk pie Galaktoboureko. Once the syrup has been absorbed, cut and serve.
