Upside-Down Spinach Pie

 

1 pkg. (10 oz.) frozen chopped spinach, thawed and

well drained

1/2 cup shredded Swiss cheese

1/4 cup chopped onion

1/2 cup Cream Of Rice Cereal, uncooked

1 1/2 tsp. Baking Powder

1 1/2 cups fat free milk or soy milk (unsweetned)

3/4 cup cholesterol-free egg product or 2 eggs

2 Tbsp. margarine or butter, melted

 

Mix spinach, cheese and onion in bottom of greased

9-inch pie plate; set aside.

Blend cereal and baking powder in medium bowl; stir in

milk, egg product and margarine. Pour over spinach

mixture.

Bake at 400 degrees for 30 minutes or until puffed and

golden. Cut into wedges to serve; garnish as desired.

Serves 4.
